Apple, Carrot & Buckwheat Loaf Cake

Created for a low fat, low calcium, vegan, low glycemic index, high fibre, protein rich healing diet 💚

Ingredients:

  • 1 cup fresh organic apple pure (skins included) + one whole apple with skin, sliced to decorate the top of the cake (this is an optional but much loved addition to the moisture of the cake)

  • 1 cup H20 or Maple Water (contact me to purchase this blissful hydration)

  • 2 tsp Organic vanilla pure extract

  • 2 tsp Apple cider vinegar

  • 2 cups Organic finely grated carrot

  • 2 tsp grated fresh Organic lemon peel

  • 2.5 cups of Organic Spray-free Buck wheat flour

  • 2 tsp Organic Gluten Free Baking Powder

  • 2 tsp Organic Baking Soda

  • 2 tsp of mixed Cinnamon, cardamom, nutmeg, allspice

  • Pinch of Sea Salt

  • 1 to 1.5 tsps Organic Monk Fruit Powder

Super easy Instructions:

  1. Preheat oven to 175 degrees

  2. Line two 20 x 8cm tins

  3. Place the dry and wet ingredients in two seperate bowls and whisk ingredients in each bowl to combine.

  4. Move the wet ingredients into the dry and mix with a fork to combine.

  5. Place the mix evenly in the tins and decorate the top with sliced apple and spinkl with cinnamon and a little tiny extra monk fruit powder

  6. Bake in the over for 32 minutes or until a skewer comes out clean 👨‍🍳

Enjoy warm and then slice the remained up to freeze for a maximum of 1 month 😋

Let’s move away from the trail of being overweight, body shape dissatisfaction, the daily dose of pharmaceutical and social drugs, persistent envy, unhappiness, anxiety, depression, and a life full of pressure to keep up, skip steps, and rush.

Living without awareness and intention creates pressures that we are not doing, we are not moving fast enough, as bosses, workers, weekend warriors, friends, lovers, parents, siblings, or grandparents. We have to be able and willing to step outside the pull of unhealthy and unhealthful cultural norms and make the critical space to do our meaningful thinking.

The first thing I need people to take in is if they are going to work with me or read my work because for me this re-frames the core of moving through all obstacles we have around stress, rush, health, weight, etc … The very blantant truth is that living under the guise of society’s expectations - is not living.

We have been fed a narrative that stepping outside or away from norms is the wrong way to exist and this narrative furthers unhappiness, unhealthiness, pressure, and a life that is too fast to enjoy.

Wherever we are, this is life—it’s happening right now, and I’ve decided that I am not going to rush through it and I invite you to join me today …
