Choc Protein Muffins
Vegan-friendly recipe is oil-free, rich in flavour, high fiber, protein-packed and delicious, but you do you and substitutions are suggested and welcomed.
Ingredient:
- 1 cup buckwheat flour 
- ½ cup organic cacao powder or organic carob 
- ¼ cup Body Fuel Vanilla Pea protein powder (can substitute with hemp or Vanilla Whey Protein powder) 
- 1 tsp Organic baking powder 
- ¼ tsp Organic baking soda 
- Pinch salt 
- 3 ripe mashed organic bananas 
- 2 tbsp Organic Maple Syrup 
- ¾ cup Water or Oat mylk 
- Handful Organic Cacao Nibs (Omit if using Carob) 
Method:
- Preheat oven to 180 Celsius 
- In a large mixing bowl, sift the buckwheat flour, cacao powder, vegan protein powder, baking powder, baking soda, and salt. Stir all ingredients together . 
- In a separate mixing bowl, mash 3 bananas with a fork, add maple syrup, mylk, and mix till combined . 
- Add the wet ingredients to the dry and thoroughly mix together . 
- Add the cacao nibs if using and stir through. 
- Line a tray with cupcake holders and add roughly one heaped tbsp per cupcake. 
- Bake in the oven for around 20 minutes or till cooked through. Transfer to a cooling rack, allow to cool, and enjoy 🧁
